Today I went to work and felt exhausted. I don't know why, because I got enough sleep. Now I am supposed to be working on Humanities homework or even watching Pleasantville, but I choose True Blood, making a corn dog, and writing this. My coworker offered to buy me a soda which most days I would turn down, to not feel the obligation of giving back, but I took a Diet Coke. It was heaven in it's earth killing plastic bottle. The sweet effervescence bursting in my nose. Wonderful!

Feels Like the First Time

I have been making a lot of casseroles lately. But in an effort to save time I use boxed pasta and add meat and veggies then top in with french fried onions. It has turned out really well every time. However something I have made that is a little more homemade is Tuna Noodle Casserole. I like to use whole wheat pasta in casseroles because it survives being cooked twice much better.

Ingredients

1 can tuna (white Albacore)
Whole Wheat Penne Pasta
Cream of mushroom soup
1.25 cups shredded cheese (sharp cheddar or pepperjack are good options)
Half an onion (diced)
2 cloves garlic
1 tablespoon olive oil.
1 cup Hot and Spicy Cheezits crumbs

1. Cook pasta until it is al dente. Reserve 1/4 cup pasta water. Follow the instructions on the box, be sure you don't cook it too long!
2. Saute onions and garlic in oil until soft and see through.
3. Mix the soup, onion and garlic mix, tuna, and 1 cup cheese. Mix in pasta and reserved water.
4. Sprinkle the last of the cheese evenly on top.
5. Sprinkle the cheezits on top.
6. Bake at 350* until bubbly.
